Our Favorite Waffle Recipe!

Today I wanted to share our favorite waffle recipe. I made these last week and intended to take a picture for this post but I forgot. I'm posting it anyway. Trust me, they are incredible and the picture wouldn't do that justice anyway! 

Ingredients: 
-2 cups of all purpose flour
-1 teaspoon salt
-4 teaspoons baking powder
-2 tablespoons of sugar
-1 1/4 cup of milk
-2 eggs
-1/2 cup of vegetable oil
-splash of vanilla

Directions: 
-Beat Eggs and add milk

-Sift flour, salt, baking powder, and sugar into liquid.

-Mix well until free of lumps. 

-Add oil and mix well.

-Stir in vanilla

-Cook it, baby!

A variation is Cinnamon Raisin waffles:
-add two teaspoons of cinnamon
-substitute 4 tablespoons of brown sugar for the white sugar
-once you pour the batter into the waffle maker, top with raisins, then cook. 

We've been making this waffle recipe for many years and it never disappoints!

Creamy Corn {A Recipe}


For the Super Bowl, I made this delicious creamy corn recipe and I wanted to share it here today. It was a perfect addition to our meatball subs and other dishes. 

I used: 
one bag of frozen corn
6 ounces of cream cheese
4 ounces (1/2 cup) of butter
salt
pepper
and crushed red pepper

I poured out the bag of corn and let it thaw in our skillet for about 30 minutes. Then I turned the stove on about medium heat. I added the cream cheese and butter and let it all melt. Once it was all warm, I added salt, pepper and crushed red pepper to taste. Serve it immediately. 

It was delicious! Matt and I even decided it would be a good dip with maybe some bacon added in with the corn. 

Jen shared it on her Instagram and I adapted it from there. I would definitely recommend adding the cream cheese and butter in equal amounts until you get to your desired consistency. Depending on how much corn you have, you may need more or less.
