Yesterday, Matt's co-worker gave us a HUGE zucchini. We considered frying it but didn't really want all of the grease. I looked up a recipe to grill zucchini and made it tonight for dinner. Matt couldn't stop eating it!
1 zucchini cut length wise
Salt, pepper, and other preferred seasonings
Brush the zucchini with olive oil and sprinkle with chosen seasonings.
You can grill on the outdoor grill if possible but we did it on our countertop griddle and it was awesome!!!!!
Wish I had thought to take a picture of it. Try it!
